Pizza @ Mother Dough in Los Feliz

I braved the hipsterland of Los Feliz for its excellent pizza!  And – a testament to the high quality and uniqueness of the pizza – I would venture back to hipsterland for this pizza.  Yes, it was that good.  A very short menu usually bodes well for a restaurant and its customers, because it means that the proprietors have confidence in their product, and that is certainly the case with Mother Dough.

And yet, not all the pizzas on the one-page, handwritten menu were equal.  Most importantly, the crust was sublime – light, puffy, chewy, and slightly tangy with wild yeast, it had none of the denseness of typical sourdough.  The margherita was heads-and-shoulders above the rest.  The prosciutto was terrific as well, but with a crust this good the addition of prosciutto was just gilding the lily.  The zucchini pie was slightly bland and pale (I do have a predilection for tomato-sauced pies, I must admit).  I was surprised to see chewy, thin sausage slices on the sausage pie – I expected the typical dabs of spiced ground pork, baked until crusty on the inside, yet still soft and yielding on the inside.

Corkage was a reasonable $15, and one of my friends brought an well-matched spicy red for the pizza.  I was surprised to find that the flourless chocolate cake was excellent as well – I never expect too much from this dessert throwback to the ‘90s, yet Mother Dough had a great rendition.  If anything, that flourless chocolate cake seemed to represent the theme of the night and of Mother Dough – dishes that look deceptively simple on paper, yet are so well-executed that you, the diner, know that more care and planning went into those dishes than into the dishes pushed out by so many newfangled restaurants.
